i started one the other night and had tostop. long story. i ended up pouring out the base tat had the grains steeped and a 1/4 can of lme. well today i picked up another one and getting ready to start later on tonight after dinner. would it hurt if i used the two cans of lme in the kit and add the other can i didn't brake the seal on?

You're asking if it's ok to use the can that you've already opened? If so, then sure as long as there's no evident infection in the LME.

OR are you asking in reference to pitching more LME - say 3 cans? If so then obviously there's going to be a much higher gravity and you'll have to up the yeast used etc...

yep. i was wanting to use three cans of light lme in this one. i still have the nottingham yeast pack from the other kit. i'll just pitch two packs in this one and let her rock!!!
 
well it is in the fermenter now. i'll check it in the morning to seehow the bubbling airlock is doing. this should be a great beer when it is finished. i'm glad i picked up a second wine cooler. i feel a third coming on soon. it'll be great to have three brews fermenting at the same time in perfect temps:mug:!!!

i'm always game totry something new. i love rye whiskey so i figured a good rye beer would be the perfect side kick. if it turns out well i could have a new house brew from now onout.
 
10:00 pm and the airlock is bubbling away already!! if it tastes anything like it did before i put the lid on it this is going to be great:mug:!!
 
with two packs of notty this thing fermented like mad!!i was sure the airlock was going to blow off, but it has managed to saty on. i'll give it a few more weeks then i'll rack it off to a secondary for dry hopping. after a few weeks dry hopping i'll cold crash it then allow it to warm back up to bottle. a month in the bottles will be great. i can't wait to try this beer out. i sit and watched it today. i'm still getting a bubble every 15 seconds out of the airlock at 62 degrees. i may let it set a solid month before racking off to the secondary.

by the way yes i know i don't have to secondary. some habbits are just so damned hard to brake!!!!
 
Think twice before you decide to dry hop for a few weeks. People have reported getting grassy or vegetal flavors from dry hopping too long.

You also might want to start sampling this after 2 weeks in the bottle rather than waiting the month as the hop aroma will begin to dissipate fairly quickly. I'd hate to think that you missed the best flavor by 2 weeks.
 
advice taken. i'll wait till a few days before bottling to dry hop it. i'll let it sit in the primary until i'm ready to dry hop and bottle.
