All,

My LHBS sells both dried additives and liquid flavor extracts from Brewers Best.

Has anyone used these? I am brewing a 5 gallon Hefeweizen for my wife and she asked if adding an orange flavoring to it was possible.

Any thoughts?

Yes, Brewers Best is a common, widely available ingredient company, at least around here. I've used a few of their dried goods, but never a liquid flavor extract. Most recently, I used a package of their cocoa nibs to make a tincture (with some vanilla and rum) to be added to an imperial porter - it turned out well.

As for your Hefeweizen, I've never seen an orange liquid extract, but who knows, maybe they are available.

Other orange-flavoring options would be to:

1. add dried orange peel (like in a witbier), but my experience with them is they lend more bitterness than orange flavor, but there is some orange flavor

2. add some fresh orange zest

3. add some fresh, cracked coriander seeds, which have a robust orange aroma and flavor

I'm pretty sure you could get the dried orange peel and the coriander seeds from Brewers Best. Let us know what you end up doing and how it turns out!

I was able to find a blood orange extract from brewers best. I do the Hefeweizen by the book and add during bottling to find the correct ratio.

I add during secondary if I am not happy with it I add more to the keg. You can always add more but you cant take it out. If you bottle your in a different boat your going to have to taste samples to get the balance your looking for.

I was able to get sweet orange peel (dried), coriander seeds, and the liquid blood orange extract. Should I add the coriander and peel during boil? If so how much? I feel this would be good and if I NEED the extract during bottling I will use that.

You can just use 1oz of each for the last 5 minutes of the boil. I used to use 1oz but eventually reduced it to .7oz of each looking at my past several brews of my Wit. But 1oz if the typical norm. After trying varying timings I settled on 5 minutes being ideal personally. Oh, make sure to crush the coriander! Just put it in a ziplock bag and take a small pot and roll over it with your fist inside. Or just use a rolling pin (which I don't have) :) Be aware, the orange peel and coriander can really clog up your kettle's dip tube. You might want to use a hop bag.
