I finally replaced the brew pot I had to leave behind.
So I can give BIAB a try probably next month.
Wal-Mart didn't have the cheepee pot their website said was in stock so my wonderful wife said to go ahead and get th more expensive good one.

That's a fantastic S.O. ya got there IMHO. Have fun going down the BIAB rabbit hole!
 
Congrats, that looks very decent!
Is it hefty? that's would be another plus.
For comparison, their el-cheapo pots are extremely thin-bottomed/thin-walled, which means: scorching hazard!

What is its volume? What size BIAB batches are you going to brew in it?

It is hefty and has the tri-ply base. I had one just like it that had to be left behind when we moved. I replaced it and bought ingredients for my next six months of brewing with the money I received for my latest Zymurgy article.
 
You will be so much happier after you get a ball valve installed. Good luck with the BIAB projects.
 
Awesome! Far less chance of scorching.
The concave bottom sides are a nice touch too.
I constantly got an almond-like off flavour from one of these thin walled cheap pots on a gas stove. It's really worth the money to invest in something solid from the start!
 
What is the volume? Looks like a 10 to possibly 15 gallon size? Looks like a great kettle!

You shouldn't boil peach pits in your beer. :p

I have a couple cheap thin-walled pots (15 & 20 gal Concorde pots from Amazon). Bought a couple false bottoms from brewhardware.com for those. Keeps the bag from scorching if I need to bump the heat.

No, I knew your weren't going for the cheap stuff. I just wanted to add my experience for people thinking about going the really cheap road.

I'm actually not 100% sure if the cheap pot was the reason. It happened to me again, but only occasionally, afterwards. I now think that dumping it very hot into the fermenter (almost boiling) and introducing a good amount of oxygen this way, plus no-chill afterwards, might also be part of the reason. Stayed hot for hours, long enough for some stuff to oxidise, which could cause this almond flavour at this stage.
