You will find about 50 million posts on that issue on here. Some like me say price only. SOme people refuse use aluminum at all. I have had no issue with mine.

You will find a lot of information of this everywhere on this forum.

Here's my opinions:
Stainless is expensive, aluminum is not as expensive.
Stainless very easily builds up a protective oxide layer, aluminum has to have the oxide layer created by you (boil water in it for 1 hour)
Stainless is hard to scratch and remove the oxide layer, aluminum is easier to remove the oxide layer, so don't clean with with abrasives.
Stainless is not as good as a heat conductor as aluminum, so an aluminum pot usually boils faster.
You will not get Alzheimer's from either pot, its a myth.
stainless is shiny, aluminum is not as shiny.

I use aluminum, because its cheap.
Here's what I look for in pots- Does it hold liquid? Can I boil in it? Will it break my bank account?

I really like my 35 qt SS pot from amazon ($75). Its expensive buy has a lot of plus sides compared to the Al turkey fryer pots (which I own as well)

1- handles dont get boiling hot
2- lid is high quality and actually makes a nice seal in pot I like during ice bath cooling.
3- it is as wide as it is tall, so any hot break is easily managed, plus you get extra evap from higher surface area and doing BIAB is easier.
4- it is sturdy and has a good low center of gravity

It was well worth the investment for me, but ymwv.
