Brew Night #2

I can't wait! Our second brew!!!! It's another William's kit and I am MUCH more prepared and relaxed than I was the first time. It's a Red Ale. I'm going to switch to Northern Brewer's kits next and, eventually, start doing my own thing. I just want to get a few good brews under me before I take a big risk.

Well, we did OK, so far. Got it brewed. Cooled it and pitched in under 45 minutes (three water baths and a 'soup chiller' husband brought from work).

It's in a swamp cooler (partly courtesy the Bud man) and registering 68 degrees. I want to go a bit cooler, but not too much. (We live in the south and room temp fermentation is, um, NOT going to get a good beer!)

And now we wait...

And wait...

and wait...

I know it will be worth it.
