I brewed a double batch on Saturday (10 gal Dog Fish Head 90 IPA and 15 gal of a Belgian Brown Ale) and looking back on the weekend, I have to laugh at myself about how I always manage to goof something up. Usually its nothing bad that wrecks the brew, but I always seem to forget something. I'm such a numbskull. I've been trying to learn Promash, so instead of writing out my whole brew recipe long hand, I used the Promash sheets. I was tweaking both recipes for a few days, so focused on IBUs and efficiency estimates, I somehow managed to forget to scale the grain bill for the Belgian from a 5 gal bill up to 15 gal. And it didn't hit me until I was looking at the grain in the mash tun and I'm like Uh Oh! Well, back into the basement I milled the rest while my mash sat. A few other goofs, but that was the best one.

Oh, I have done the same thing but usually catch it before I measure the grain because I know it takes more grain to make 10 or 12 gallons. The best thing you can do is to review your brewsheets before brewing so you can make any changes or notes before you are in the midst of brewing. I also have a standard list of equipment to go over before brewing so I don't run around looking for things when I should be watching the pots.
 
yah, thats a point well taken. But it always seems like I'm running around finishing up my domestic responsibilities before hand when I should be preparing. I guess that its all part of the fun.
 
I really don't think I have had a session without something going wrong! I just accept that I am an idiot and will never have a perfect brew day. I can guarantee you that the minute you think you are home free, something will go wrong.
 
My last brew a couple weeks ago had some interesting problems. I messed up what water I was planning on using (turned out to be OK) then forgot my 5.2 stabalizer

Biggest thing is I somehow didn't order enough of the right grains, so I subbed in some other things in my bastardization of OctoberFast (BM's recipe). That also helped me end up with more in my mash tun than I had planned. So I was mashing 23 lbs I think in my 10 gallon cooler (11 gallon batch) so I had a hard time getting all the grain and all the water in there, and stirred up well, also had sooo much fun getting the temp right lol. Ah well it'll be beer.
