Hi

I have a recipe for el cedro from jesterking and it calls for brett drie at bottling. Wyeast suggested brett lambicus as a substitute

Any thoughts

Thanks
Josh

According to Funk Factory

Common Name Species Name Synonym (Strain) Name Lab/Package Flavor/Aroma Source Note
Drie Dekkera bruxellensis B. drei BSI "highly aromatic" Isolate from Drie Fonteinen; Pro-Brewers only.

I think I would try to clone it from a bottle.

Now is when I wish I never rinsed the el cedro dregs away.

Ill have to see what my local craft bottlo see what they have. But I'm in Australia so may not have anything.

But bottle yeast growing sounds like a good idea

I believe that White Labs 644 (Brettanomyces bruxellensis trois) is the drie strain.
