Hello.

I got my hands on two Omega Where Da Funk? yeast packs and I was thinking on doing a Brettish Belgiany Pale Ale.

Would a combination of Munich, Flaked oats, Wheat, Abbey and Carared malts work together? I was thinking of doing something with a little more color and character.

Has anyone tried this specific blend from Omega?

Haven't tried it, but my 2 cents would be make a basic APA and get your character from hops that would go with the fruity characteristic of the yeast/brett blend.

I've used it plenty of times. If your using it in primary it'll give more of the fruit forward aromatics, sometimes slight Brett "barnyard" type flavor but it all depends on available sugars, fermenting temp, etc. If your doing it in secondary you'll get more of the "funk" esters and phenols from it.
