Doing my first 15 Gallon Boil in my HLT this evening on my Bayou Classic Burner in preperation for my first AG tomorrow afternoon. What worries me is that the bottom of my HLT is Cherry Red. The thing is SCORCHING!!! Is that right?

Melting point of steel is about 2500F. It won't melt, but it won't do it any good either. As Edwort said, turn the gas down.

Theres really no point in the gas being that high. Water could only reach boiling, then it becomes a gas, and if it's provided more heat, it will only evaporate.
