Hey all...I bottled my first homebrew ,which is a Witbier, last thursday (2/15). I was just wondering what you all think would be a good time to pop one open and try it out? From what I've been reading 2-3 weeks seems like the standard wait time, but I don't know if I can wait much longer even though I'm nervous that it won't taste as I expect it too since it is my first one. Any input would be awesome, this site has already helped me out a bit with my first homebrew as a newbie. :mug:
 
Give it at least 2 weeks, at least let it carbonate a little.
 
Yeah, I would open one at 2 weeks and see where you are at...

If it is not fully carbonated, at least you get to try one! I like to open one at one week just for kicks. I usually get a little pop, but mainly a flat beer. It is basically an excuse for me to try one.
 
This is probably one of the most frequently asked questions and there are tons of great responses in this and the bottling/kegging forum. A quick search will give you loads of information on that topic. :fro:
 
RDW, and wait at least 2 weeks to HAHB. ;) :D

Seriously--conditioning beer tastes aweful green before its done, and it may discourage you if you drink it too soon. Its better to wait.
