I brewed 39 days ago on Memorial day and plan to bottle my IPA today.



The pictures below are my carboys with the hops in them. The stopper is 0 bubbles a minutes. I forgot to take an og.



Based on all of this I just wanted to make sure I'm not bottling to early and that from the pictures it looks normal.

How long should I wait to drink it after bottling? A week?

Krausen looks to have fallen and after a month of fermentation I'd be shocked if you weren't ready to bottle. Although a steady hydrometer reading is the best way to tell. e.Even without an OG, a steady FG means that fermentation is done.
 
Unless your target OG was like 1.090 or something, I'd be amazed if it wasn't done.
 
My Pale Ale wasn't ready until 3 weeks in the bottle. I tried one every week and it was like a different beer every time. Until 3.5 weeks before it settled down and tasted like it should, and that was with a much milder recipe than an IPA. I'm cracking them open this weekend, which is 4 or 5 week by now.
 
With an IPA and that much headspace I would have dry hopped at about 10-14 days and bottled at 17 - 21 days. The hop aroma will have faded quite a bit before you get this one bottle conditioned.

But given the time it is most likely ready to bottle.

Bottle conditioning generally takes 3 weeks at room temperature. I have had some that were carbonated at two weeks but ALL of them tasted better at 3 weeks or longer.
