I just made a hard cider I made from pasteurized cider (no preservatives), honey, yeast nutrients, and Safale US-05. OG 1.056. It sat for about a month (10 days primary, 18 secondary), FG 0.999, ABV 7.6%. Tasted great when bottling (I used corn sugar solution to carb it); nice and dry.
Now a week into bottle conditioning, I have noticed some white floaties at the top of all (or almost all) the bottles. Pictures attached (I happen to have bottled one clear one).
I cracked one open to investigate, and I can't tell, but it might smell sulfury. Tastes okay, but now I am paranoid and not objective. Maybe sour, but not sure if more than before? I don't expect a bottled cider to be sweet, and I kind of like it dry, but maybe the smell is throwing me off.
So I'm just wondering:
1) After a week, might it still be fermenting the priming solution? If so, could the white floaties be krausen?
2) If it is still fermenting, what is that smell, and will it go away?
3) Do you think that white stuff indicates an infection instead? If so, is there anything I can do?
