I just bottled my 3rd brew tonight, an amber ale (hopefully, lol). I had kept it in the primary fermenter (6.5 gallon carboy) for four weeks. I had planned on bottling last week but time got away from me. I don't think this extra week screwed anything up too bad because when I took a taste, it was pretty good. My OG was 1.059 and my FG was 1.011 for an ABV of approximately 6.3%. :tank: One of the problems I experienced was when I was siphoning from the carboy I had kept the siphon tip in the center of the carboy instead of towards the edge. The center of my carboy is higher than the sides which caused my siphoning to end prematurely before I had gotten out all of that amber liquid refreshment.

This was the recipe I used:
1 lb Briess crystal 60L
7 lb Briess Gold malt extract
1/2 oz cascade 60min
1/4 oz saaz 40 min
1/4 oz cascade 40 min
1/2 oz saaz 20 min
1/4 oz saaz last 2 min
2tsp Irish Moss
Wyeast #1056 American

I'm dying to dig into my Porter I bottled 2 weeks ago, but want to wait at least another week for that.
 
That 4 week period helped your beer, not hurt. Your yeast do more work after fermentation. You just gave them ample time to clean up after themselves. You'll find better results if you make this standard practice.
All my beers sit in Primary for 4 weeks, then go to keg for 1-2 before serving.
 
Thanks Irregular, I wasn't sure if going over 3 weeks would have an adverse effect. After this batch I think I will take your advice and go four everytime with how it worked out.
