So tomorrow is bottling and I Would like to know what you guys think. What is best practice when it comes to how much space we should leave in the bottle? 1/2 inch? 1 inch? So far, in the 3 batches i've made I left about an inch or so, maybe a little more. Just wanted to know what best practice was. Thanks.
 
Using a bottling wand I've always filled to the very top, and when the wand is removed it leaves ~1/2"-3/4" of headspace.
 
I fill to just slightly below the top of the bottle with the bottle wand in the bottle - less clean-up from overflows. I measured a few bottles before and after filling once and average 11.8 oz per bottle. That's convenient to know for calculating how much beer is lost during transfers assuming you know your post boil volume pretty accurately.
