I normally brew beer but wanted to try something different: cider.

Maybe its just my knee jerk reaction from brewing beer, but shouldn't I boil the apple juice (and cool it) before pitching the yeast?
 
I wouldn't boil it. But it is personal preference if you want to heat it to pasturize. I generally buy pasturized cider from the store so I do not heat it on the stove.
 
If it is commercial juice, there is absolutely no reason to boil it. If you do boil it, it will likely leave your cider cloudy. Just put your juice in your fermentation vessel, take a reading with your hydrometer, pitch your yeast, put a lid and airlock on, and wait.
