Hello, I'm pretty new to brewing kombucha, and have made about 6 batches using continuous brew about 1 gallon at a time. I bought scobys from 2 online vendors and used them both in my brews hoping for a nice varied community.
Anyway, today i pulled the top scoby off, which was about 3 solid layers thick, about 1/4", and had a couple dime-sized blue mold colonies on top.
on the bottom of the jug, there is another scoby with a couple layers that obviously isn't moldy.
I am of the mindset "when in doubt, throw it out" - but was wondering whether the bottom-floaters were still viable to produce new batches with, or if they're going to soak up toxins from the top layers that were moldy?
This batch apparently never properly fermented, the pH is still pretty high after a week. I'm guessing it didn't acidify quickly enough, my house temperature dropped from 72/74 to 62/64 this week due to weather changes.
