Well, I've got a Lappish Hag's Love Potion brewing at the moment, with only six days to go. The thing is, is that I'm thinking the heat lamp I'm using might be too hot/bright for my wine. I've noticed that by the end of the third week, one day of fermentation provided enough CO2 to fill up an entire balloon, and also spew the wine out of the bottle - luckily, I didn't let it do that.

I'm using a 24 oz wine bottle, which is filled up to just over 4/5 of the way. It's got a screw cap, which I keep on it to keep it sealed (With a balloon on the top to stop any leakage from going anywhere.). My biggest concern is that if it can produce enough CO2 to fill up a balloon in one day, would it be safe to leave it sealed for another six days, or would that leave me with a glass grenade on my hands? Kind of scary, really.

Regardless, my main concern is whether to leave the bottle closed until the 24th, or to let out the pressure everyday or every couple of days. I really, really don't want it to explode.

Note: If 5 ounces of space could fill up a 30 ounce balloon, it could've been like 90 psi in there... Whoa.

Ummm I really don't know how to help. I suppose this is relying on the wild yeasts present on the blueberries, but they aren't particularly concerned with sanitation. I did read that they suggest opening and resealing it once a week to vent the produced co2. So would would aire on the side of caution personally, but I don't know if this is supposed to be carbonated or not, these sorry for the term ghetto brews are hard to judge and give advice on.

Yeah, country wines aren't exactly something of a 'precise' art, so to speak. I'm just wondering how much pressure your typical glass wine bottle can handle before going kaboom and making a big purple mess. Oh yeah, it's also supposed to be carbonated.

Note: I turned off the lamp for half an hour and let the gas into the balloon. It only filled it up about halfway.
