I am trying to come up with a recipe that will be ready to drink when my wife delivers our third at the end of march or so. I decided that something lower in alcohol and easy on the palate would be best...please comment and critique...

Ingredients:
9.0 lb Golden Promise Pale
1.0 lb Caramel Malt 10L
.25 lb Caramel Malt 20L
1.0 oz Willamette (4.3%) - added during boil, boiled 60.0 min
.5 oz East Kent Goldings (4.5%) - added during boil, boiled 30 min
1.0 tsp Irish Moss - added during boil, boiled 15.0 min
.5 oz East Kent Goldings (4.5%) - added during boil, boiled 1.0 min
1.0 ea Danstar 3767 Nottingham

Mash at 153 for 1 hour, double batch sparge (first time trying batch sparging, so efficiency is a variable I cannot estimate well...assuming 72%). Collect about 7.75g of wort. Boil 1 hour for final volume ~6g into fermenter. The willamette hops are leaf, goldings are pellets.

Thanks in advance for your help!
