Black IPA recipe help

I am looking for the malt bill for a black ipa. This is what I am thinking:

5.25 gallons

6 lbs. MO
6 lbs 2-Row
0.5 lbs Chocolate Malt
0.5 lbs Cara-pils
0.5 lbs C-80.
Wyeast 1272 American Ale II

Hops are amarillo, magnum and chinook in some order.

Will this malt bill achieve optimal black color and malty tatse? I will probably mash around 154F. I can't download any software because I am using a work computer. Otherwise, I would input this in promash or beersmith.

Not to shabby...maybe a little light on the crystal and heavy on the choco. I would knock the choco down a hair and add some debittered carafa or black, MO probably isnt worth it either..all two row would be fine.


You will likely end up with a brown IPA with your current recipe.

THis all being said, your current grain bill will be a coffee/roasty/dark brown/dry beer...I would find it delicious!
 
Looks fine to me - I personally use black patent malt in my BIPA - I put it in during the last 15 minutes of the mash - helps to get the color without a lot of the roasted flavor. But if your after that flavor - go for it.

Permo is right on. Just for comparison, here is the last Black IPA that I did. It turned out very well. It's for 5.5 gallons

Ok that sounds good. I have already crushed the grain but I have another 1/2 lb. of C-80 that I could throw in. And I have another 1/2 lb of Cara-pils that I could throw in. I knew I should have added a touch of black patent.

No the software rounds 6 oz (0.375 lbs) to 0.38

For my recipe you're looking at:
10 oz C 35
6 oz C 75
12 oz Carafa Special III
 
I don't round at all. Here's my grain bill for a Dubbel I have coming up soon:

10.09# am two row
1.89 munich 10L
1.69 wheat malt
1.01 aromatic
172g cara-red 45L
172g crystal 120
172g special b
172g honey malt
1.07# table sugar, caramelized

I went to my LHBS and asked for these exact numbers. I like hitting target percentages more than averaging out weights... it just makes more sense for rescaling recipes for different efficiencies and batch sizes.
 
Ha - interesting. I don't notice a less than 1 oz difference in grain myself. Probably deficient taste buds maybe! Hops I round to the gram. I'm not terribly interested in precision though since I am a musician also!
 
You're probably right, but I want to know exactly how much I need to change if I ever do different batch sizes or give my recipe to someone else who has a different efficiency.

Also I'm a bread baker by profession and a nerd.
 
You know what you could do? If you have some extra chocolate lying around you could try steeping it or adding it at the tail end of the mash for color.

Don't get us wrong, your recipe will be quite tasty, but it won't necassarily be a black IPA....you are going to have a hopped up brown ale, but it should be pretty tasty.

You don't always have to follow guidelines, and I brew IBA all the time and it is very tasty.....

Would you mind posting your proposed hop schedule?
