I have an Imperial Porter that I am aging in secondary with some oak cubes. Been taking samples every two weeks to be sure I don't over oak it.
My question is, after what amount of time would it be wise to re-pitch a little yeast when I bottle it? Also, if I do re-pitch dry yeast, what strain is ideal (have S-05 and Notty on hand)? Finally, what is the best method for re-pitching....just throw it in separately or re-hydrate in the priming solution?
I am planning to age in bottle for a minimum of 6 weeks before serving so it will have some time to mature.
Here are the stats for the brew:
OG: 1.112
FG: 1.027
Primary: 3 weeks
Secondary: 3 weeks (currently)
Planning to leave it until 8 weeks go by or I decide the oak flavor/aroma is where I want it.
