So, my pot it's quite big enough for the prescribed water via Beersmith so I've taken to basically doing a Sparge Dunk Rinse...

I heat my BIAB up to sparge temps, pull it and drain, and then dunk into a bucket with water at sparge temps for about 5 minutes. In Brewsmith I'm using the Single Infusion, Batch Sparge mash profile rather than BIAB so that it calculates my water levels. I water treat both...

Basically, is this an OK legit method? What am I missing out by doing it this way?
 
Perfectly legit. You will need to adjust the standard grain absorption rate in BeerSmith for your actual values once you have calculated this out. BeerSmith has a separate grain absorption rate for BIAB, but it only uses that value when you specify a full volume BIAB mash profile.
 
Dunk sparge is perfectly legit. To get best results you want to open the bag and stir the grains vigorously after dunking. This is to equalize the wort SG throughout, so you don't end up with the grain holding on to higher SG wort. If you are going to squeeze, most important squeeze is before the sparge.
