Hi all! Lurking for a long time, posting now to seek your expert counsel.
A few weeks ago I brewed my first 3gal BIAB batch, NB's Belgian Farmhouse IPA recipe. (Link: http://www.northernbrewer.com/documentation/allgrain/BIAB-AG-DeBelge.pdf) I used Brewpal on my phone, which was great, though I ran into a couple issues. I think because I used an electric stove, I wasn't able to ensure a constant mash temp. I began the mash at 149, covered the kettle and walked away. After the 90 min mash, the temp had dropped to around 135, if I recall correctly. I went ahead with the boil and added hops on time. OG was at 1.081, which I thought was startlingly high but chalked up to BIAB newbiness. I pitched a single Wyeast 3942 Belgian wheat (produced a couple weeks before), aerated and stuck it in my basement. Fermentation began heartily, petered out after a few days and I left it in primary for 17 days.
Flash forward to last night and I stupidly bottled before measuring FG: 1.031. Uh oh. Now lots of googling suggests that I might have some liquid IEDs on my hand, so I've put them in a plastic tub, covered it with a heavy weight and two thick blankets.
Now I'm going away for four days. Do you think things will be okay? Perhaps I'll use mega mitts and some kind of helmet/visor to inspect them upon return? Gracias.
