i currently santize with one step and have had no problems with it for the year that i've been brewing. I've been looking into converting to star san to sanitize but not sure if would be any easier or less clean up.

My main concern is i"ve heard not to have it exposed to plastics for long periods of time. Those who use it, is it just as easy to sanitize the plastic and tubing?

Only certain plastics seem to have long term issues with star-san. In my experience 'long term' is days or weeks. There's no need to sanitize a bucket for days or weeks. 15 minutes at the most. I sanitize everything with star-san with no problems. Buckets, spoons, bottles, carboys, cornie kegs, etc. This stuff is the S$#^! No rinse and no worries.
