Hi!

It's the time of the month where I'm working on my purchase of ingredients. I want to try Safbrew Abbaye AND make a Belgian IPA of some sorts. I don't know if any of you ever tried a Gouden Carolus Hopsinjoor - that's the kind of beer I want to brew. I'm not brewing a clone by the way, I just want something that would look like it, as opposed to a Citra/Mosaic/Amarillo-powered IPA with Belgian Yeast.

I'm a 1-gallon brewer, so totals reflect that.

66,7% Weyermann Pilsner
22,2% Wheat Malt
11,1% Munich Malt

The number at the right represents IBU.

0.10 oz. Horizon : 60 mins, 23,4
0.10 oz. Sterling : 20 mins, 8,8
0.10 oz. Saphir : 20 mins, 4,1
0.10 oz. Sterling : 10 mins, 5,3
0.10 oz. Saphir : 10 mins, 2,5
0.10 oz. Sterling : 5 mins, 2,9
0.10 oz. Saphir : 5 mins, 1,4
0.10 oz. Sterling : Whirlpool +- 0,5
0.10 oz. Saphir : Whirlpool +- 1,5

Target OG @74% : 1.060

A few issues :

- Is that too much hops? That's nearly an ounce of hops in 1 GALLON of beer. I designed it that way because I had an IBU number in mind (50) when I made the recipe. I just want to avoid grassy taste and fruit rind mouthfeel. I didn't go for any kindof dryhop whatsoever.
- Is that a little unbalanced between the bittering charge (Horizon) and the late (10 minutes and less) charge?
- Choice of hops : I already have Sterling and Horizon in the freezer. I'd have to order Saphir. I do have the following hops in the freezer as well : Williamette, EKG, Bramling Cross, Chinook, Hallertauer, plus three other varieties that wouldn't fit quite right with what I want to brew (FF7C, Citra, Galaxy).
