Hi, second batch on my new system, i have a question. i plug the recipe into beersmith for 10 gal. it says est pre boil volume for 10 gallon is 13.44 gallon. by the end of my 60 min boil i am right at 12 gal. maybe a lil bit more than 12. by the time i put it in the fermentor i have around 11.50/11.75 gal. my og was 1.051 my efficiency 87.4. my question is when i look to make my yeast starter i am making it for 10 gal. but i am ending up with a lil bit more than the 10 gal. do i reduce the mash water or the amount of sparge water to get to the 10 gal. mark? thanks in advance
 
If you reduce the Amount of spare water your efficiency will go up and you will overshoot your og. You should reduce sparge, mash water, and grain bill to hit your wanted pre boil volume and og. Just adjust the profile to meet your systems volume and efficiency amounts.
 
Ive noticed beersmith does the same for me if I go by its sparge volumes. I think its got the grain absorption #'s off. If you know your boil off just sparge enough to hit your pre boil volume.
 
I'd adjust boil off rates based on actual measurements. Same with mash tun dead space and kettle chiller losses. Then let beer smith make adjustments for you.

well i dont have dead space because my pumps suck every drop out of the tun and kettle. i did adjust the est. pre boil now its 11.46 gal. so this should work out much better. thanks
