I've never tried O'Fallon Chocolate Cherry. This beer is a blend between a batch of chocolate stout, a batch of stout spiked with tart cherry juice concentrate and a Christmas spice infused vodka tincture I made. I'm very happy with the results.

I wish you could too. The "cherried" half of the ten gallon batch resulted with a much stronger cherry flavor than I anticipated (I used 1/2 gallon of tart cherry juice concentrate in 5 gallons of beer). The concentrate tastes amazing before fermentation -- exactly like liquid cherry pie. On blending day I decided that 1/2 gallon of the cherry half blended with the full 5 gallons of the chocolate half was the right level of fruitiness (a distant background note of fruit and spice was my goal. I wanted my stout to taste like a great chocolatey stout first and foremost). I only needed 1.5 teaspoons of my spice tincture to get the spices dialed in, too. Blending is such a rewarding way to control your flavors.

The end result is something I can be proud of, but I have gallons less than I expected to this year. I might end up with 3 bottles for personal consumption, aging etc. All the rest are spoken for. Sorry Bokeh.
