Wow, what a difference a week makes! What a difference a yeast makes! I had a sample of Pale #2 last weekend after two weeks in the bottle. It was much better than my first effort (Fleishman's yeast), but still not what I was hoping for.
I cracked one yesterday after three weeks in the bottle and, wow, did I brew this? It was damn tasty! Nice aroma, not so cloudy, and a tremendous head. Very dense with tiny, tiny bubbles. The flavor was pretty close to Sierra Nevada.
Honestly, I thought it would take 4-5 batches of learning before I would be able to brew something presentable. I took 4 liters to a family gathering yesterday. The non-BMC drinkers were impressed, they couldn't believe home brew could be so tasty. (The BMC drinkers reacted as expected, saying polite things behind the grimace on their faces.)
Looks like I'll be buying another bucket and more bottles; 3 weeks is too long to wait between batches.
