Hi folks - I had the pleasure of visiting Chuck Miller's moonshine distillery in Culpepper Virginia last year. One of the moonshines he produces uses oak and apple chips that are charred, wrapped in giant cheescloth bags and then soaked in the moonshine. This creates a moonshine with a whiskey color as well as a bit of a smokey flavor. He then sells the moonshine soaked woodchips. He and I chatted a bit about me being a homebrewer and he said that other homebrewers have bought the oak chips and soaked them in their beer.
So, the question: what would be a good base beer for these wood chips? I'm thinking an American strong ale.
