Barley Wine Question?

I was wondering once fermentation is over and you bottle, can you just put them in a moderately controlled climate and be good with it for the next 6 months.

Yep. And 6 months is on the short side of things.

Brewed my first one after Thanksgiving last year (12%). While my last one was pretty good, I think it has a ways to go before it peaks (maybe 18 months or so).

Good info guys thank you. This is gonna be my first barely wine- if I decide to do one- so ill be excited in another year for christmas
