Hey all.


Lived in NYC, Rochester, Boston, then Austin. I brewed back in Rochester during college, mostly extract, but was making my own recipes.. I'm now finally settled in enough that I have time to brew, and I am back to extract brewing, but still stuck on other peoples recipes and have forgotten much of the science behind brewing that I need to get back.

I got a kit for Christmas from morebeer.com a while back, and ran through the two recipes (english dark ale and amber ale) and have since also made a Sam Adams Boston Ale clone (just tasted for the first time - doesnt look like it, but definitely tastes like it.)

I'd like to get back to where I was - able to make my own recipes, and eventually (2 more batches) get into mini mash, and then (10+ more batches) get into all grain.

You're lucky to have such a good store locally. Ours is pretty bare-bones.
Austin is a cool city. I lived there in the mid-90's and bar tended down on Barton Springs.
Fun times...
 
Welcome. I am new myself, but I always like to see fellow brewers in Texas. i am down here in San Antonio, trying to also get on track to be able to create my own, but like having a baby, all the fun is in the trying! Welcome again! :mug:
 
Havent posted in a bit here now.

Boston Ale clone was fantastic.

In the bottle now is a Fireman #4 clone, and AHS's old school IPA in the carboy now (pic below)

Also picked up this kit:
AHS Honey Hibiscus Wit

Going to do this with a local raw honey and plan on adding the honey after the temp is at 100 degrees post boil to keep the honey enzymes intact.
