I've seen some videos of a simple way to brew some mead so I am going to give it a shot.

My first batch will be 3lbs of clove honey, 1 gallon of water, cinnamon sticks (2), and a vanilla bean. I'm going to try this run with lavlin EC-1118 yeast. I'll let it ferment for 2-3 months then bottle it into a gallon jug. I see a lot of re-racking so I'm not sure if from there I should again or just see what happens?

I can't sit and monitor and do other strenuous methods due to the fact that im leaving it at my uncles since I cant brew alcohol in the barracks. Any tips for my method would be appreciated! Thanks!
