I'm going to add some concentrate after fermentation is done. I was going to rack to a secondary on top of the concentrate.

How long should it stay in secondary before bottling and kegging?

Do I even need to use a secondary when adding concentrate?

You won't need a secondary. Add to your primary when fermentation is done.
If the concentrate doesn't need to ferment, you can just add it to your bottling bucket or keg instead.

Assuming the OP meant what s/he wrote, apricot concentrate contains nearly an ounce of sugar per cup.
Definitely needs to have some yeast chow down on it, but I agree there's no need for the extra racking, just mix it in the primary and let the yeast have at it...

Cheers!

Thanks for the feedback. Yes this is apricot concentrate.

Should I stir it in (gently of course)? I've always stirred my bottling sugar in with no problems.

I won't use a secondary so would stirring cause problems with off flavors because of the trub? Or would it tend to help by rousing the yeast since the concentrate has sugar in it that needs to be fermented?

If the sugar needs to be fermented should I be taking add'l gravity checks after adding?

Lol...am I overthinking this? Maybe I should relax and have a home brew...
