My apple wine is 2 months in and cleared up nicely. I tasted it last night and it is so hot alcohol flavored thats really all I tasted. It's around 12% ABV so it shouldn't be so hot that there isn't any apple flavor but it is. Would sweetening it help out ? I used Cotes de Blancs yeast. Anything else I can do to get it drinkable ?
 
Perfectly normal. Did you use the recipe on here with 2 lbs of sugar? That's a large part of it. What about fermentation temp?

Most folks say the apfelhooch needs 9-12 months before being drinkable.

Let it age, the flavor will come back.

Taste again in 6 months. If you still need more fruit flavor, back sweeten with apple juice.
 
I have a strawberry apple wine aging now. At the moment, based on taste, I. Could probably fuel my car with it.

Everything I've heard says wait, it'll get better :)
