I started my first batch of Edwort's Apfelwein this evening....followed the directions EXACTLY....but when I checked the original gravity, it only came to 1.054 (corrected for temperature, of course). Edwort's recipe says 1.066. Now granted, I did take the sample AFTER I had pitched the yeast into the carboy....could this matter, or could it possibly have something to do with the brand of juice I used (Great Value)? I added the entire two pounds of corn sugar....any thoughts?
 
Your sugar probably wasn't completly mixed...If you used 5 gallons of AJ and the sugar in the recipe, your gravity is fine.

When I made this I ended up back sweeting it with another gallon of AJ, adding some sugar then Sorbistat K and some K-meta to prevent further fermentation, then force carbed it in a keg....awesome!
