Okay - yesterday I made my version of EdWort's Apfelwein. I made it with 5 gallons of Mott's Natural and I boiled a pound of light brown sugar. I used Lavlin EC-1118. Then I came on here and realized that EdWort uses TWO pounds of extra fermentable sugar. My question is, can I add some more brown sugar, dextrose, maple, honey, anything one day later after fermentation has begun? Or should I leave it alone and let it go? If I keep it as is - what kind of ABV can I expect?

yes, you can add more sugar. just boil it in a cup or two of water to dissolve and sanitize the water, then cool it and dump it in, i would use dextrose. i've been making apfelwein without any added sugar and it ends up about 6% ABV, so you would probably be around 7.5 or so with just the one pound of sugar.
