Dumb question of the day time:

Has anyone made JAOM with apples? It just seems like the spices in JAOM would play well with, maybe better, with apples. I was thinking of slicing up some granny smith apples and just following the rest of the recipe as is. My concern is that the apples might not impart enough flavor into the mead, and also, that they may not give the yeast some nutrient that the orange does.

Any thoughts?
 
I don't think the flavor of the apples will be strong enough, and it won't have the same pithiness that supposedly tempers the sweetness of the jaom. What I've been thinking of is some jaoc cyser. So use a little less honey and apple juice instead of the water. Follow the rest of the recipe as is and you might get some nice apple flavor along with the spiced orange mead flavor. I haven't tried it but it could work.

I think it'd be easier to just use apple juice instead of water.

Thats what I was thinking, but I didn't know it using apple juice or cider would give the yeast too many fermentables. Also, I was afraid that the pulp would take forever to settle out.

Also, I would probably need to reduce the amount of honey, right? If so, by how much?

There is a calculator on gotmead that you can use to figure out how much less honey you should use if you want to keep the initial gravity the same.
 
I had pretty much the same question... I like the sweeter wines and mead so I took the JAOM recipe that my father had on hand and switched a few things around... here's what I started with and hopefully it'll come out nice too... started it on the 9th and now she's happily bubbling the airlock...

21 lbs. of Summer Blossom Honey
12 oz. of Craisins
7 big Navel oranges (peeled and sectioned)
7 big Crispen Apples (Cored and sliced thing)
3/8 tsp All Spice
3/8 tsp Nutmeg
6 Cinnamon sticks
9 Whole cloves
1 package of Lalvin Yeast (71b-1122)

Added Pectic enzyme and topped a 6 gallon carboy with water...
 
Well, technically, it wouldn't be JAOM if you used apples. But I digress.

Try adding apple juice concentrate. It's cheaper than juice and it has no pulp.

Ha ha haha... That's what I was thinking, so I was just going to ask if anyone made JAAM or JAC (Joe's ancient Cyzer)... But I thought that no one would know what the heck I was talking about.

I've never made JAOM, so I don't know if its the spices you like or the ease of the recipe, but I've made a few ciders and cysers (1/2 cider, 1/2 mead) using Mott's apple juice and I've been happy with the results. You could also replace some of the apple juice with a little cranberry or pomegranate juice. You would have to use less honey because the juice already has sugars in it.

Well, at that point, it would be your recipe. Albeit heavily inspired by this Joe fella.:D

Good luck with it. I've got some JAOM in bottles that I made back in march. Itching to have one. I had the dregs from bottling it a few weeks ago and it was tasty.

Think I'll bottle the Joes Quick Pyment I've got tonight and drink the leftovers from the process that won't fill up a full 12oz bottle. :rockin:
