Doing the NB 20-minute Kolsch kit on Wednesday. I am using harvested WYeast 1007 and have a healthy starter, so I wouldn't mind upping the gravity a percent point or so. Any suggestions? NB said a half pound of corn sugar is about all they'd recommend for that kit - more than that could result in a "cidery" flavor, they said.
 
To avoid the cidery flavor all together you can sub DME for corn sugar pound for pound. It will give you more body and better flavor.
 
just a light DME would work with just about anything but for a Kolsch I would recomend a pilsner DME.
