I'm at 15 days in the primary on a lager. Expected final gravity is 1.010 and currently the specific gravity is reading 1.012. I am going out of town for several weeks and I figured that primary fermentation would be done by now but it is taking a little longer. Is there any problem with starting secondary fermenting/lagering at this point? I would imagine the last .002 of fermentables will get eaten up pretty soon.

If you want the SG to continue to drop, leave it on the cake longer.

Secondaries are realy just brightening tanks, the job of which is to clear the beer of as much yeast as possible.
