Today I am dumping my "93 cent wheat" as it is absolutely undrinkable. I am going to save five or six bottles out, and would like to find someone who is extremely experienced in off-flavors to tell me what it is and why it happened. I was thinking that a certified BJCP judge would be the best source; are there any in this forum who would help? I would ship the bottle to you with details on the brew; in return, you provide a written assessment as to the problem. I do not want to repeat whatever went wrong with this brew!

Thanks,
John

Why not start here by describing your process, recipe, and the problem?

Sure, I have posted several threads on it; mixed ideas on what went wrong, so I would really like to get the beer in front of a human ;)

Recipe thread:

Problems with the dry yeast and four days before any visible signs of fermentation:

And "is it infected" thread:

And someone with similar problems with similar yeast:

Intense plastic.

Thanks,
John

Plastic flavors generally come from chlorinated water. It can come from rinsing with chlorinated water. Some wild yeast can cause them as well.

It does sound like a combination of weizen type yeasts, which already produce phenols in their profile, combined possibly with some chlorinated water and then the long lag allowing some wild bacteria to start playing in the wort are all at play. I'm not a big fan of the Danstar wheat yeast, though mainly as it is maybe too neutral to create a lot of clovey phenols or banana esters.

I'm BJCP national, so if you want to ship me one, I'm game. I'll send a PM with address.

I'm in general agreement on the chlorine in the tap water being the main issue. I'm no BJCP judge, though I'd to be someday :), but I have a couple of friends here that are cicerones I could probably convince to take a sip and give an opinion.
