Hi folks,

being Austrian, I am not too familiar with IPAs and therefore I wanted to get some Feedback from you pros on an IPA I am planning. The malt bill results from some leftover grains.

Recipe Type: All Grain
Yeast: Danstar BRY-97 West Coast Ale
Yeast Starter: No
Batch Size (Gallons): 6
Original Gravity: 1.075
Final Gravity: 1.018
IBU: 60
Boiling Time (Minutes): 70
Color: –
Primary Fermentation (# of Days & Temp): 10 Days @ 65F

Marris Otter 78%
Weyermann CaraRed 10%
Weyermann Light Wheat Malt 10%
Special B 2%

26g Citra FWH
18g Cascade 15 min
9g Cascade 10 min
9g Citra 5 min
13g Citra 0 min
13g Cascade 0 min

Mash @ 150for 90 min.

Dry hop for 7days:
20g Cascade
40g Citra
20g Sorachi Ace

As you see I'm aiming for a straightforward citric/grapefruit/lemon flavor.
What do you think?

Hi!

What I would do is try to increase the hops around the end of the boil. Maybe reduce the initial 28g of citra and increase the late additions! What I normally do when I brew an IPA is determine my hop schedule working backwards. Basically I start building up my hop schedule and IBU's from the late additions and add only a small amount at 60 min. I find that this gives you a very interesting bittering and a very nice hop aroma. And thats basically what you want in an IPA.

I would also try to reduce the final gravity. 1.018 is pretty high for an IPA. Maybe mash at lower temperatures or add some corn sugar to dry it out.

Just some suggestions!

Another vote for more late additions. Move more to flameout and hop burst. That FG would be completely fine... IF you add more hops. Balance out that sweetness with some more hop character and you'll be solid.
 
+1 to all of the responses above. I'd second adding some simple sugar near flame out. This will help dry out your final beer. Maybe a lb or so. You can cut back on the base malt to get your gravity back where it is now.

2 other suggestions, I'd cut the carared down to about 5-7%. 10% sounds like a lot to me, but maybe it will work out well. I'm not truly sure.

For the dry hop, doubling the Citra compared to Cascade and Sorochi Ace is not a great idea. I LOVE Citra, but it is a dominating flavor. I'd actually just swap the Citra to 20g and the Cascade to 40g. I use both a lot in IPAs and APAs and can tell from experience, other hops get lost when a large percentage of Citra is used. A little bit goes a long way.

Overall, sounds like a good beer. Good luck :mug:
