So I'm starting a 2 gallon batch of cider this afternoon. Plan is to give it a month or so in primary and then rack to 2 one gallon jars. I plan on adding some cinnamon, nutmeg and ginger to one of the jars for secondary.

The question is, does anyone have guesses, experience or thoughts on how much to add?

I'm thinking of cinnamon in stick form and then fresh grated nutmeg and ginger.

I used one ounce of thin sliced peeled fresh ginger in secondary for 3 weeks. At that time, tasting had good ginger flavor but the cider was still hot. I racked to a tertiary and removed ginger while aging longer.
