I had an Imperial American Pale Ale a few weeks ago and really enjoyed it. I have a kegerator in my poker room (I have a building with a tattoo studio downstairs..a garage w/ a finished room attached that is my mancave...and an Apartment upstairs)....but I just picked up a kegerator for my apartment for practically pennies from craigslist and would like to have a stronger Pale Ale perhaps up to about 8% ABV for my "private reserve". I made Edworts Pale Ale a week ago and I can tell I am going to really enjoy it...but I was wondering if I could alter his recipe and bump it up to an 8% ABV....anyone have any thoughts on this?
Thanks,
Chris

It won't taste the same. but use about 13 total pounds of grains like I have. Just increase the two row. And if you want to bump it another point add a pound of honey. I find it is best with about 11 pounds total grains and no honey for my system and 6 gallon batches. Adding light DME is another way of bumping up the ABV.

Don't forget if you bump up the malt, bump up the hops - key would be keeping the IBU/OG Ratio about the same I would think?

Also, I'm not one to normally suggest this, but it might not be a bad idea to use a 1lb. or so of corn sugar, rice solids, whatever to get the upped ABV without effecting the body, etc. much...

It's going to be an all together different beer at double strength I would think, but it should be decent.

Sure. Corn sugar or honey. Either one would work. Everybody has to try one or two batches like this to see what it tastes like. Keep experimenting!

If anyone wants to pick that apart, feel free to do so. I just started with a 10 gal batch and scaled it down to volume and adjusted the grains slightly for AC. On second look i might cut that crystal in half, because with that much grain, you probobly won't need the extra body.

I don't think I would change a thing. I put the original into Brewsmith and the recipe came out almost the same.
