Just in time for the fall season! This was kind of born out of necessity when my LBHS was out of light DME and I had my heart set on making a graff anyway. Dark DME was all they had, so we decided to use that extra maltiness to our advantage and make a fall-inspired apple pie graff.
Ingredients:
8 Gallons Apple Juice
4lb Dark DME
1lb Crystal 60L
8oz Cara-Pils
1.5oz EKG (or similar low alpha hop) @ 45min
1tbsp cinnamon
2tsp nutmeg
Similar to Brandon-O's graff recipe, steep the 60L and cara-pils in 1.5 gallon of water @ 155 degrees for 30 mins.
Sparge with .5 gallons 170 degree water and throw away grains.
Add DME and bring to a boil.
Add hops when boiling starts and boil for 45 mins. Add your spices 5 min before the end of the boil, or make a tea and add at bottling/kegging.
Add the apple juice and the wort to the fermentor. If about half of your apple juice is refrigerated, you should get to perfect pitching temp just by combining everything!
I used nottingham because it's what I had on hand, but you can use any neutral ale yeast.
