I made a Honey Blonde back in May. This was my 2nd try at this recipe as the 1st one didn't have enough Honey flavor. Fermented for 3 plus weeks at 63F. Moved it to the Keg where I added more Honey to give it more Honey flavor. This was then put on the CO2 to carb and condition. I went on vacation and didn't touch for 4 weeks. My son watch to make sure temps didn't go up. I have a temp controlled fermentation chamber. Everything was great but that first taste was all honey due to settling which I new I would have. Poured out about a pitcher and it was drinkable but still seemed like it needed more time. 2 weeks ago I bottle some and took to a party it was good. I think it still isn't right but one person at the party loved it. I drank 2 bottles myself. Last night I went and pulled one from the tap and it smelled good and the first taste is better then all of a sudden you get a real strong burning and alcohol taste.

What's happening here? Why am I all of a sudden getting this real strong alcohol flavor? Any ideas as to what it can be or what I can do with the beer?
 
Only thing I can think of if there was still yeast active in your keg. When you added the extra honey it started to ferment.
 
I think I know what your talking about. I've got a similar off flavor in a red I just did. Trying to pinpoint the cause. It tastes a little warm with an alcohol type flavor. Mine was fermented at 60 and I've done this recipe a few times. Would under pitching cause this type of flavor? I usually made a starter for this but I just pitched one pack this time.

If that is the cause I'm sure the surviving yeast struggled to consume that honey under pressure and low temp and with a diluted colony. Could be similar situation.

From what I understand, honey doesn't add much actual honey flavor since it tends to fully ferment. Most honey flavor comes from honey malt. Like the above post, it seems like your beer fermented more and you just have some higher alcohol content now.
 
Thanks for the suggestions. I was thinking I may have gotten some late fermentation but the keg has been under pressure and chilled to 36f. I still think I may have gotten some late fermentation but maybe it separated out in to layers. I'm going to try some again then shake the keg a little to get it mixed and then try it one more time.
