I made a Honey Blonde back in May. This was my 2nd try at this recipe as the 1st one didn't have enough Honey flavor. Fermented for 3 plus weeks at 63F. Moved it to the Keg where I added more Honey to give it more Honey flavor. This was then put on the CO2 to carb and condition. I went on vacation and didn't touch for 4 weeks. My son watch to make sure temps didn't go up. I have a temp controlled fermentation chamber. Everything was great but that first taste was all honey due to settling which I new I would have. Poured out about a pitcher and it was drinkable but still seemed like it needed more time. 2 weeks ago I bottle some and took to a party it was good. I think it still isn't right but one person at the party loved it. I drank 2 bottles myself. Last night I went and pulled one from the tap and it smelled good and the first taste is better then all of a sudden you get a real strong burning and alcohol taste.
What's happening here? Why am I all of a sudden getting this real strong alcohol flavor? Any ideas as to what it can be or what I can do with the beer?
