How can I check alcohol content of my brew before bottling. How long should I leave in bottle before refrigerator and how long there before drinking.

Subtract your Final Gravity from the Original Gravity multiply the answer by 131.25, and that will tell you the ABV.

Leave in the bottle at 70F+ for about 3 weeks. Put one in the fridge for a couple days and then open it to see if it's carbed yet. If so you can fridge them all for about a week or more and then drink. You can also just leave them at room temp for longer if you desire and then put a few in the fridge about a week before drinking.
