I read that some people add a pound or 2 of honey after the boil. I was wondering if this was okay and if it changed the flavor. Thanks in advance; I'm a rookie brewer. :mug:
 
I can't say that I have ever noticed a difference between adding honey after vs before the boil.

In fact, I have never noticed a difference when adding honey vs any other type of 100% fermentable sugar (such as dextrose, or table sugar).

Though my palette may not be as refined as others, so this is an extremely subjective response.
 
It's hard to get flavor from honey. You can get the aroma. Two pounds will lighten the body of the beer quite a bit. As I understand the recipe is not really a cream ale by BJCP standards. The honey probably will make it closer.
