Hi there,

So, I brewed up the AHS Anniversary Wit 10 days ago, and it has been sitting in my big Ale bucket. I haven't done a FG reading yet (it was at 1.020 on Saturday), and was hoping to turn it into a strawberry wit.

I have 5 pounds of frozen strawberries in my freezer, but forgot about my grand plan to rack the Wit on top of the strawberries in my 6 gal better bottle, and so now I have the AHS Anniversary Hefe fermenting away there, it has been 4 days, the air lock popped off, and its fermenting away again.

My question is, can/should I just throw the 5 pounds of strawberries into the primary bucket for the Wit, or let it hang out until I bottle the Hefeweizen, and then rack onto the strawberries in the better bottle (At this point it will be sitting in primary for about 17 days).

And any other tips/suggestions/NO DON'TS! are welcome!

Thanks!:mug:

I would wait and use the fruit on a different style of beer like a blonde or cream ale.

I brewed the wit and it took 14 days to fully ferment-the wlp 400 likes to take it's time
