Is it advisable (or possible) to age beer in a kegerator? I would think it slows down the aging process significantly. Main reason I ask is because I already kegged a beer that I now think would benefit from a month or two of aging.

Take it off the gas and take it outta the keggerator. It'll age in the fridge but it will take alot longer than if it was at room temp. I've taken beers out of the keggerator all the time and put back months later. No biggie.

+1

OTOH I regularly go straight from bucket to keg, cool n gas and 2-3 weeks later the brew is excellent. No room conditioning at all. Sometimes when I've run out of space in the fridge I'll leave beer at room temp for months (or longer). In those cases, the taste does improve of course, but few guests notice it. Only I do.

It's rare a beer will last that long these days anyways so it's a non-issue for me.
