I would like to make a braggot, but keep it low ABV, something that is easy drinking. I was planning to have it around 6% abv and fermenting it with an ale yeast.
I age my meads at least a year, and know some big braggots need to age as long as a standard mead does, but since its only 6% and a smaller amount of honey, wouldnt it age faster?
I dont mind aging it for as long as it takes, I just dont want to rush it to my keg and need to make sure I have the space free to age, as I dont have a lot of storage right now
